Being a student, I don’t have time to create fancy meals that take up my time. I like quick and easy meals that take no effort at all. If you like me and you don’t like spending too much time in the kitchen, you’ll love this. Its oven baked potato slices! So yummy and healthy because you’re not drowning it in oil.
It’s my favourite meal to have with a simple salad or vegetables on the side. Sometimes when I’m feeling extra lazy i’ll have it with an avocado dip on the side. It’s very filling and healthy. It’s takes 10 minutes to prepare. Then you stick it in the oven for about 15 to 20 minutes. It’s that easy!
Prep time: 10 minutes
Cook: 15 minutes
Ready in: 25 mins
Ingredients:
2 – 4 Potatoes
2 tablespoons olive oil
¼ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon coriander powder
½ teaspoon smoked paprika
½ teaspoon garlic and herb spice
Step 1:
Preheat the oven to 180 – 220 degrees C. If you don’t have a non-stick baking tray, remember to grease your tray.
Step 2:
Peel the potatoes and cut into slices. If you want, you can leave the skin on and cut into wedges or thick chip-style.
Step 3:
Place the cut potatoes in a large bowl or what I like to do is place it in a plastic bag. Less washing up to do. Toss the potatoes with olive oil, salt, ground black pepper, coriander powder, smoked paprika and garlic and herb spice.

Step 4:
Once tossed around nicely. Arrange the slices in a single layer on the non-stick or greased baking tray.

Step 5:
Bake in preheated oven for 15 to 20 minutes. Wait till they are golden and crisp. You can top it off with any vegan sauces. I love having good old tomato sauce with mine.

If you have any easy and quick vegan potato recipes you would like to share, let me know in the comments below. Would love to hear from you. XX
