Roasted Paprika Cauliflower with Vegan Tortilla Wrap

It’s official - tortilla wraps with roasted paprika cauliflower is my new favourite! It’s so healthy and satisfying and easy to make. As you know, I love simple and quick recipes and this one is at the top of my list.

For this vegan wrap I used wholegrain tortilla wraps. They are perfect because it’s light and so satisfying with the cauliflower and salad. These wraps are great for lunch or even dinner. The cauliflower is used as a substitute for meat and honestly, you don’t miss the meat at all!

Prep time: 10 minutes
Cook: 20 minutes
Ready in: 30 minutes
Ingredients:
8 pack wholegrain tortillas
1 large head cauliflower
1 yellow pepper
half a cucumber
2 tablespoons olive oil
1 teaspoon smoked paprika
½ teaspoon garlic and herb spice
Step 1:
Preheat the oven to 180 degrees C. Grease the baking tray to ensure the cauliflower does not stick to the tray.
Step 2:
Cut the cauliflower into 4 quarters and then cut each quarter into 6 pieces. You want as many falt surfaces as they roast the best.

Step 3
Place the cauliflower in a plastic bag and toss it with olive oil, smoked paprika and garlic and herb spice.
Step 4
place the cauliflower flat on the baking tray and make sure they are spread out. Place into preheat oven for 15 – 20 minutes

Step 5:
While waiting for the cauliflower, you can chop the yellow pepper and cucumber into thin slices.

Step 6:
Once the cauliflower is done. You can assemble the wrap by adding the cucumber, yellow pepper slices and roasted cauliflower. You can add as much as you like to your wrap.

It’s that simply! It’s easy to prepare. It’s delicious. You can make it for your family and friends. I bet they won’t even notice that they're not eating meat. Try it, I dare you!
